Chicken Salad is a light, tasty meal that’s good for you, any time of year, for lunch or dinner.  Especially when you’re too tired to cook or pressed for time, or just want to take a break from slaving away in a hot kitchen. Not to mention, it’s simple to make!  Great chicken salad doesn’t require a complicated recipe, fancy equipment, or precise measurements. Just add or omit ingredients to suit your taste.

Best of all, you can make chicken salad without turning on the stove. Use leftover grilled chicken, rotisserie chicken from the deli, or canned white meat chicken. If using a deli chicken, be sure to discard bone and skin, and use the breast meat only.

Debbe Geiger admits it: Her motivation to exercise was zero and had been for years. She could summarize her feelings about exercise in two words. “It stinks,” says Geiger, of Cary, N.C.

Her thinking changed when she finally found her exercise motivation: commitment to a team.

Geiger joined a volleyball team — after much urging from friends who wanted her to play with them — and now she doesn’t want to let her teammates down. She’s at the gym with a convert’s fervor on game nights.

“There have been lots of reasons I could have missed, and I haven’t,” Geiger says proudly.
